Turkey Pot Pie

The ultimate comfort food! This meal encompasses all of the food groups, is great for leftovers and makes the house smell delicious. So flavorful and simple it's great for a busy, hungry family! Perfect for your leftover roasted turkey. I like to serve it with fresh made bread if you have it.

Prep time: 15 minutes

Cook time: 30 minutes


Ingredients

- 1/2 lb cooked turkey cut or torn into bite size pieces

- 1 small bag frozen mixed vegetables (beans, carrots, corn and peas) (use fresh if you have them

- 1 Tbsp olive oil

-3 stalks celery, sliced

- 1/2 yellow onion, diced

- 1 large can cream of chicken soup

- 1/4 cup milk

- 1 store bought pie crust (or make your own if you have the time)

- 2 tsp Italian seasoning

- Salt and pepper to taste


Directions

- Preheat oven to the temperature the pie crust box recommends (or if using your own for a single crust pie per the directions)

- In a medium skillet add olive oil, celery and onion, saute until tender but still semi-firm

- In a large mixing bowl combine turkey, frozen vegetables, chicken soup, milk and seasonings

- When the celery and onion mixture is ready add it to the bowl, combine

- Pour contents into either oven safe ramekin bowls (for single servings), two pie plates or a rectangle baking dish

- Cut crust to fit your respective dish(s), press to sides of dish and cut small vents in the crust to allow steam to escape

- Cook according to pie crust directions, typically about 20 minutes at 400 degrees

- Serve with fresh bread or biscuits if you have them
