Fried Green Tomatoes

When you just can't wait for the tomato harvest to be ready! A great way to keep those tomato plants producing until fall. This is one of our favorite summertime treats. Serve as an appetizer or side dish.


Servings: 6

Prep time: 10 minutes

Cook time: 10 minutes


Ingredients

4 green tomatoes

1/4 cup olive oil

2 eggs, beaten

3/4 cup flour

1 cup corn meal

Salt and pepper to taste


Instructions

-Slice tomatoes 1/4 inch thick

-Combine flour, corn meal, salt and pepper

-Mix thoroughly, place on plate

-Whisk egg, place on plate

-Place olive oil into a skillet on medium-high heat

-Dredge tomato slices in egg then flour and cornmeal mixture

-Fry on each side, approximately 5 minutes or until golden brown

-Serve hot with your favorite dipping sauce

-Enjoy!
