Every season is grilling season! Why not throw the veggies on the grill and free up the oven. This recipe is a light alternative to green bean casserole around the holidays and a perfect pair for any of your grilled proteins. Packed with flavor and texture, this is one of my faves!

Ingredients
1 lb fresh green beans, ends trimmed
1/4 cup preserves (peach or apricot work best)
1/4 cup red onion, diced
1/2 cup red, orange or yellow bell pepper, diced
1/2 cup olive oil
1 Tbsp vinegar
1 tsp salt
1/2 tsp pepper
Instructions
-In a small sauce pan on medium heat combine the preserves, onion, bell pepper, vinegar, salt and pepper
-Simmer for 10 minutes or until bell pepper is fork tender
-Remove from heat
-Heat grill to medium high heat
-Arrange green beans in a single layer on a wire resting rack (typically used for cooling dishes out of the oven - this will ensure your beans don't fall through the grill grate)
-Place beans on the top rack of the grill, close the lid
-Cook for 5 minutes then use tongs to rotate the beans
-Close lid and cook for an additional 5 minutes or until greens are fork tender with a slight char
-Place beans in a large bowl and toss with prepared sauce
-Enjoy!
