My favorite side with any Asian inspired meal. Great as a stand alone dish as well. Make it your own by adding your favorite vegetables and protein.

Cook time: 30 minutes
Serves: 6
Ingredients
1 cup rice, cooked and cooled
1 Tbsp sesame oil
1 bunch green onion, sliced
1 can peas and carrots
2 eggs
1 Tbsp chopped ginger
1 Tbsp diced garlic
4 Tbsp soy sauce
Instructions
-Heat sesame in large skillet over medium high heat
-Add cooked rice
-Stir occasionally until some of the rice starts to brown slightly
-Move rice to edges of pan allowing a gap in the center
-Add eggs
-Mix eggs and rice together, stirring occasionally until eggs are scrambled into rice
-Add ginger and garlic, mix well (add more or less to achieve desired flavor)
-Add soy sauce, mix well until all of the rice turns a light brown color
-Add can of peas and carrots, mix well
-Serve hot with your favorite Asian meal
