Lemon Basil Quinoa

Don't be afraid! It's easy and I promise you are going to love it! A healthy alternative to rice, this is the perfect side dish for your favorite fish entrees, light sandwiches or as a stand alone. Feel free to add and take away the herbs and don't be afraid to add some veggies and/or protein to make it a light, fresh main dish.

Prep time: 5 minutes

Cook time: 20 minutes

Servings: 6


1 cup quinoa

2 1/2 cups low-sodium chicken stock

1/2 cup fresh squeezed lemon juice


1/4 cup olive oil

1/4 cup fresh squeezed lemon juice

1 cup chopped fresh basil

2 tsp lemon zest

Salt and pepper to taste


-Cook quinoa according to package in instructions, instead of water use the chicken broth and lemon juice

-While the quinoa is cooking mix together the ingredients for the dressing

-When the quinoa is done stir dressing in, coat thoroughly

-Serve warm or cold
