Ingredients
1 cup quinoa
2 1/2 cups low-sodium chicken stock
1/2 cup fresh squeezed lemon juice
Dressing
1/4 cup olive oil
1/4 cup fresh squeezed lemon juice
1 cup chopped fresh basil
2 tsp lemon zest
Salt and pepper to taste
Instructions
-Cook quinoa according to package in instructions, instead of water use the chicken broth and lemon juice
-While the quinoa is cooking mix together the ingredients for the dressing
-When the quinoa is done stir dressing in, coat thoroughly
-Serve warm or cold
-Enjoy!
