I talk about recipes being in the family for generations...this is one of those. My Mama's recipe. So many memories - Bottom line, this old school potato salad is nothing fancy but nothing short of amazing. My children keep making it so that tells me it's beyond good ;) get back to basics and make a classic!
Servings: Depends on how hungry your guests are (at least 12)
Prep time: 1 hour
Cook time: 1 hour
Ingredients
6 russet potatoes, peeled, boiled and cut into bite size pieces
6 eggs, boiled, shelled and cut into bite size pieces
1 quart jarred pickles, diced
1 yellow onion, diced
3 cups mayonnaise
4 Tbsp yellow mustard
Salt and pepper to taste
Fresh dill from the garden if you have it
Instructions
-In a large bowl, combine all ingredients
-Stir until mixed completely
-Garnish with fresh dill (optional)
-Enjoy!
