Olive Loaf

Updated: May 22, 2020

This homemade bread is fantastic as an appetizer or a side dish to any meal. Nothing makes the house feel like home more than homemade bread in the oven! It's not that hard, you can do it ;)

Servings: 8

Prep time: 2 hours

Cook time: 30 minutes

1 1/2 tsp instant yeast

1 cup lukewarm water

2 3/4 cups all purpose flour

1/2 tsp salt

1/2 tsp garlic powder

1/2 tsp alpine touch (optional)

1/2 cup pitted, chopped Kalamata olives

-Place water and yeast into a standing mixing bowl and wait 10 minutes

-Add remaining ingredients except the olives

-With the dough hook, kneed on low speed for 5 minutes

-Fold in olives, knead until the dough pulls from the edges (add flour as needed until the dough releases from the bowl)

-Spray a mixing bowl with nonstick spray

-Transfer the dough into the bowl, place in a warm place and allow to rise until double in size (about 1 hour)

-Punch dough (the fun part)

-On a baking sheet lined with parchment paper form dough into a flat, oblong loaf shape

-Make three deep cuts in the dough

-Place a towel over the dough, place in a warm place and allow to rise until double in size (about an hour)

-Preheat oven to 400 degrees

-Dust loaf with flour

-Place in the oven

-Throw 3 large ice cubes in the bottom of the oven (this will give you the nice crust)

-Bake for approximately 30 minutes or until a toothpick inserted in the center comes out clean
