Shepherd's Pie

Tastes like home... there's nothing quite like putting a feel good comfort food on the table. Covers all the food groups, quick and easy to prepare and it's delicious after a long day of hunting (or any cold day).

Prep time: 20 minutes

Cook time: 30 minutes

Servings: 8

Ingredients

1 1/2 lbs ground meat

1 yellow onion, chopped

2 cups frozen mixed vegetables (or use your own fresh: peas, corn, carrots, green beans)

1 tsp garlic salt

1 tsp ground pepper

1 tsp thyme

2 cups beef broth

2 Tbsp flour

4 cups mashed potatoes (I use leftover homemade or Idahoan garlic and herb)

1 lb shredded sharp cheddar cheese

Instructions

Preheat oven to 375

In a large skillet, heat oil over medium-high heat

Add onion, seasonings and ground meat

Stir occasionally until meat is thoroughly cooked and onions are tender

Add beef broth and flour until sauce thickens to gravy texture

Add mixed vegetables and stir until slightly tender

In a large baking dish spread meat and vegetable mixture

Spread mashed potatoes in an even layer on top of meat mixture

Top with shredded cheddar

Bake at 375 degrees for 20 minutes or until cheese is bubbly and slightly browned

Let cool for 10 minutes

Best served with homemade biscuits and brown gravy
