My favorite sidekick to all Mexican food recipes in my repertoire. It's easier than you think... forget the stuff in a box, you can do this!
Prep time: 10 minutes
Cook time: 30 minutes
Servings: 8
Ingredients
2 cups white long grain rice
2 bouillon cubes
1/4 cup olive oil
1 large diced onion
1 can stewed, diced tomatoes
3 garlic cloves, diced
2 Tbsp cumin
2 Tbsp dried Italian seasoning
1 small package frozen green peas
Instructions
-Cook rice according to directions, add bouillon cubes to water
-In a large skillet, add half of the olive oil, heat on medium high
-Add onion and garlic and saute until translucent
-Add remaining oil, then cooked rice, stir
-Add dry seasonings
-Stir constantly, you want the rice to brown slightly so turn up the heat if necessary
-When rice is slightly browned add stewed diced tomatoes
-Mix well until your rice turns that lovely pink color
-Add peas, saute another 5 minutes or until peas are no longer frozen
-TASTE IT! Do you need to add more salt, pepper, spice? Make it your own, please your pallet ;)
