Zucchini Noodles "Zoodles"

Looking for a way to reduce your carbs and use up all that zucchini from the garden? Here you go! Such a great substitute for pasta. Anything you make with traditional pasta can be replaced with zoodles.


Servings: 8

Prep time: 30 minutes

Cook time: 15 minutes


Ingredients

4 six inch zucchini's

1 Tbsp sea salt

3 Tbsp olive oil

Salt and pepper to taste


Instructions

-Zoodle your zucchini using the spiral attachment on your mixer (NOTE: if you do not have a spiral attachment for your mixer use a potato peeler, your zoodles will be more of a thin fettuccine, still yummy!)

-Place zoodles in a strainer, add sea salt, toss, place in sink and allow to rest for 20 minutes (this removes excess moisture)

-Heat olive oil on medium high heat in a deep skillet

-Saute zoodles until fork tender, approximately 10 minutes

-Top with your favorite sauce

-Enjoy!
