Zucchini Pie

A great way to use some of those extra zuchs from the garden. Great as a side dish for breakfast or dinner. Or add some protein and make it a main dish.

Prep time: 10 minutes

Cook time: 45 minutes

Servings: 8


3 cups zucchini, sliced

1 yellow onion, diced

4 eggs

1 cup Bisquick

1 tsp salt

1 Tbsp dry Italian seasoning blend

1 Tbsp minced garlic

1/2 cup olive oil

1/2 cup shredded cheddar

1/2 cup grated permesan cheese


-Stir together the zucchini, oil, eggs, Bisquick, Parmesan, cheddar, onion, garlic and salt

-Transfer the mixture to a pie plate and evenly spread

-Bake 45 minutes at 350 degrees or until the top is golden brown
