Grilled Zucchini Rounds

Skip the potatoes! This will be your new favorite side. Zucchini is so versatile, it will take on any flavor you want it to. So quick and easy and the whole family loves it. Pick your dipping sauce or drizzle sauce, to each their own. Here I topped it with a balsamic glaze and some crumbled goat cheese (my fave). Dipped in ranch or fry sauce, amazing. Get adventurous and cut out the middles and make zucchini rings out of them (kids love it). Also great with yellow squash.

Prep time: 10 minutes

Cook time: 4 minutes

Ingredients

1 extra large zucchini you let grow to long (or a few normal sized ones)

2 Tbsp Alpine Touch Seasoning Salt (or seasoning salt of your choice)

1 cup cornmeal

Nonstick spray - or- 2 Tbsp olive oil

2 Tbsp balsamic glaze (optional)

2 Tbsp crumbled goat cheese (optional)


Directions

-Wash and slice zucchini into 1/4 inch rounds

-Sprinkle both sides with seasoning salt

-Dip rounds on each side with cornmeal

-Heat grill (or frying pan if you don't have a grill) to medium high heat

-If grilling, spray an aluminum foil sheet with nonstick spray, layer your zucchini rounds and spray the upper side of them with spray

-If cooking in a pan, put the oil in the pan and allow to heat on medium-high

-Place zucchini rounds on grilling/frying surface

-Allow to cook for 2 minutes, flip, allow to cook 2 more minutes

-Remove from heat and place on paper towel lined plate to drain excess oil

-Serve hot with your favorite drizzle, toppings and/or dipping sauce

-Enjoy!
