Spring is in the air and I am craving fresh, lite, flavor packed entrees that leave me feeling satisfied. I am also a fan of quick and easy! It's that time of year and I like to spend as much time as possible outside. This meal is a weeknight winner! Great leftovers for lunches also.

Cook time: 10 minutes

Ingredients
1 lb steak, tenderized -or- game bird, tenderized
1/3 cup olive oil
1/3 cup balsamic vinegar
1 Tbsp dried oregano
2 Tbsp diced garlic
1 cucumber, peal on, sliced
1 red onion, finally sliced
1 package cherry tomatoes, halved
1 package crumbled feta cheese
Kalamata olives
Shredded lettuce (optional)
Tzatziki sauce/dressing (found in the produce section, refrigerated)
1 package pita pocket bread -or- naan bread, warmed
Instructions
-Marinade your meat of choice in olive oil, vinegar, oregano and garlic for at least 4 hours, 24 hours is ideal
-Prepare your vegetables
-Heat grill or fry pan to medium high heat
-Sear meat approximately 3 minutes each side or until desired doneness is achieved
-Thinly slice meat
-Coat bread with a light layer of tzatziki sauce
-Fill with meat and veggies
-Add more tzatziki sauce
-Top with feta cheese and kalamata olives
-Enjoy!
